Coconut & Cocoa Energy Bites

Coconut and cocoa energy bites (no-bake)

These no-bake energy bites are delicious, nutritious, and dairy-free.

1/2 cup coconut oil
1/4 cup cocoa
1/4 cup agave nectar or maple syrup
1 cup desiccated coconut
1/4 cup oats
Put all the ingredients into a food processor and blend together until the oats have broken down and it’s well mixed.
The coconut oil will have melted in the process and the mixture will be easy to work with.
Take a bite-sized amount of mixture and roll it into balls. Roll in coconut if you would like a fancy finish. Alternatively, push the mixture into ice cube trays.
Refrigerate. These tasty bites will be ready in 30 mins, once the coconut oil has solidified again.
Keep for up to 7 days in an airtight container in the fridge. Freeze for up to 3 months.
